Several steer are being raised in 2025 and are scheduled to be butchered in the Spring of 2026.
A half-side of beef requires about 8 cubic feet of freezer space.
After placing your order, (as we get closer to the Spring of 2026), we will contact you to to help you decide on your custom cuts, just the way you like them. We will also coordinate delivery/pick-up arrangements. (Deliveries are limited to the Middle Tennessee area).
Here’s how buying a half-cow works— it’s FUN and as easy as 1, 2, 3.
1) Reserve your half-cow by making a $250 deposit (below), which of course is 100% applied to your final cost of your beef purchase.
2) Once your half-cow goes to slaughter, in the Spring of 2026, we’ll get the hanging weight from the slaughter house. A typical hanging weight is approximately 60% of the live weight. For example; a 1200 lb. live steer will dress out to a hanging weight of about 720 lbs. You’re buying half of the steer, weighing about 360 pounds. You’ll pay the going market rate per pound (ESTIMATED to be around $5.50) based on hanging weight, or about $1,980 (360 lbs. x $5.50 / lb. = $1,980). Hanging weight will vary from animal to animal.
Once we know the hanging weight you’ll pay the balance owed for the animal and then pay the the slaughter house separately. Your $250 deposit will be 100% applied toward the cost of the animal.
Slaughter fees, paid directly to the slaughter house, will be charged at the going slaughter rates as of Spring of 2026. Estimated slaughter fees are $600 per ½ cow.
We welcome the opportunity to personally work with you to complete the slaughter house cut sheet so that you receive cuts customized exactly the way you prefer. Customization includes details such as steak thickness, sizes of roasts, amount of hamburger meat and so on. Helping YOU find the perfect balance between receiving the delicious custom cuts that you desire and keeping your processing fees to a minimum is our goal.
3) Once the half cow is processed and cut to order, you may expect a yield of approximately 200 pounds of fresh, pure beef.
Your half-steer will yield approximately:
Roasts - 12
T-bone steaks – 14
Sirloin steaks - 5
Sirloin tip steaks – 5
Rib-eye steaks – 14
Round steaks – 6
Short ribs
Flank steak
Stew meat
Brisket
Tenderloin
Ground Beef – about 75 lbs.
